Review of Warm Egg Plant Salad (Vegetarian) at Spago Singapore by suhui
*This was marked vegetarian, not vegan — probably due to the cheese. I had this without the cheese!
Spago doesn’t have the most extensive vegetarian/vegan-friendly options, this was the only vegetarian option on their Lunch Prix Fixe Menu! Super umami, a delightful smokiness to the eggplant (the eggplant caviar + sesame sauce go beautifully together) — the falafel chips were a little dry, but do complement the eggplant’s silkiness quite nicely! The dish is very flavourful and /could/ be a tad salty for someone with a low sodium palate (I found it so!), but the pomegranate molasses were a refreshing addition to balance out the savoury.
The serving isn’t huge (certainly not a substantial main if you’re a big eater) and might feel like a pinch since it’s Spago. You could probably get equally fantastic eggplant dishes at a lower price point elsewhere. But if you want to swing by Spago for it’s ambience (which is lovely), this veggie-friendly option will be a good bet.
