Simple & delish; it reminded me of the stripmall Chinese take-out of my youth. Eggplant & red pepper strips in a sweet soy sauce. While the hot bar within the grocery store is mostly meat/animal product based, I was happy to find this dish along with one other vegan offering. #mercyforanimals
