After failing in various attempts to make my own sweetened condensed milk, this product was a sight for sore eyes! Perfectly sweet, easily substituted for dairy condensed milk. I use it in a sweet sauce for a vegan chicken dish, but I think it would be good in baking recipes as well.

Looking for a festive holiday drink?
The Coquito is a coconut based drink (similar to the 
eggnog we drink in the states), that's very popular in Puerto Rico.
My husband is Puerto Rican on his mom's side, so when we met I discovered this drink, and I have never looked back. This is so much better than the traditional eggnog of raw eggs in heavy cream.
The coquito is thick, creamy and coconutty!
Everyone has their own version of this holiday drink, and here is our vegan version of the Coquito.

Makes 6 generous servings

INGREDIENTS
  
11 oz sweetened condensed coconut milk
1 cup oat milk, I use full fat Oatly - or your favorite plant milk
27 oz coconut milk, unsweetened
1 cup white rum, such as Bacardi
pinch salt
1 tsp vanilla
¼ tsp cinnamon
freshly grated nutmeg, for topping the drinks

INSTRUCTIONS

Place all of the ingredients, except the nutmeg, into a blender and blend until smooth.
Transfer to a pitcher and chill a minimum of 4 hours, but preferably overnight.
Once chilled, pour into glasses and sprinkle with some freshly grated nutmeg.

*Once chilled some of the coconut cream tends to solidify, so you'll get little bits of coconut in the drink. Although not absolutely necessary, to get the Coquito perfectly smooth and creamy once again, I like to give it a quick blend, either with a whisk or in the blender, before serving.
