Review of Sweet Yellow Cornbread and Muffin Mix - martha white by tina360

I had to use some #vegansubstitutions but this cornbread turned out pretty good! 😋 These premade mixes are so convenient but they always call for animal products like eggs and milk. Instead of an egg, I used 3 tablespoons of aquafaba and instead of milk I used unsweetened oat milk with a splash of olive oil. This mix is nice because it only makes 6 muffins which is perfect for us since it's just the two of us. Good source of iron as well. Goes great with chili or vegan meatloaf or would be nice with some sort of vegan BBQ chunk of protein and coleslaw.
