Fantastic!!! The taste and texture is really great for this pseudo panini….

On homemade sourdough (from a neighbour): roasted garlic mayonnaise, sautéed creminis, asparagus, leek, and the smoked tofu with vegan mozzarella. ****
**** This is inspired by the Best Ever Paninis served at the lovely WHOLE GLOW CAFÉ in Cumberland, BC, which sadly, is just a bit too far to go for a panini.
