Review of Genuine Brewed Rice Vinegar - Marukan by aqualing
#Ricevinegar is a must have for Chinese/Eastern Asian cooking. It’s made from fermented rice 🌾 , sometimes seasoned with sugar (usually for making sushi rice).
It’s less acidic than western white vinegar and less complex than aged black vinegar (e.g. Zhenjiang/Chinkiang vinegar I posted a while back). Good for stir-fries and dressings for cold dishes, where you want some zing but not overpowering. The clear color is another consideration when compared to black vinegar.
I used some of it to make the dressing for a smashed cucumber salad🥒 An simple and refreshing cold dish that’s easy to make and super flavorful😋 Just remember to salt the smashed cucumber for some time and draw out any excess water before mixing it with the dressing. This will ensure the crunchiness and flavor👌🏼
