I'm glad that my taste buds have matured and I enjoy kale now. I usually get dino kale, but thought I'd try the traditional variety this time to make kale moochim (Korean dressed kale) and my usual cold udon noodle salad. Blanching it makes it much easier to eat. I found I blanched it a bit too long for the kale moochim and it lost its structure. I blanched for a much shorter time for the noodles and it held its shape and texture much better!

I love my usual noodle and kale recipe, but I recently got Max La Manna's cookbook, You Can Cook This, and had to try out his recipe. Instead of blanching the kale, his recipe makes crispy, noochy, kale chips to add to the noodles! The peanut butter miso dressing is a different direction as well.

This kale was pretty easy to work with and separated from the stems nicely after being washed. I reserved the stems to make a green stems pesto later!
