Kimchi Beef Taco (Veganized)

I am devastated. Taco Boy recently revamped their menu and removed their fajitas, which were my go-to meal there. Due to this unfortunate incident, I had to order tacos. While I enjoy tacos and appreciate the unique options and vegan mods they offer, I am incredibly picky about my tacos, so these were just ok. They allow you to substitute any meat with fried crispy tofu, but I asked for beans instead. Their black beans 🫘 are saucy and flavorful and they didn’t skimp which was great! This taco was filled with beans, kimchi, a drizzle of Korean BBQ sauce, and a sprinkle of sesame seeds and cilantro overtop a double layered corn tortilla. I love kimchi, so that was an exciting element, though it got kinda lost in the beans and sauce. It was lacking some texture but you’d probably get this if you ordered the crispy tofu. I’m not big on sweet condiments like BBQ sauce, but it’s an interesting contrast and I’m thankful for the unique vegan option!
