Date and nut energy ball recipe by Charlotte Mei
Do you have 20 minutes and six ingredients? That’s all you need for this recipe. This is a great snack to carry around with you for a quick afternoon pick-me-up, or a pre-workout energy boost. Try out different variations with dried apricots/figs/cranberries and different nuts and seeds.
If you can’t take nuts or don’t have any almond flour at home, you may use oat flour. To make the latter, simply grind up rolled oats in a food processor till fine.

Makes 11 balls
Ingredients
5 large Medjool dates, pitted
1 tbsp (12g) almond meal
1 tbsp (6g) cocoa powder
1 tbsp (6g) coconut flakes
1 tbsp (44g) nut butter
Pinch of salt
Method
In a processor, blend all ingredients together until smooth. If it’s not coming together, add 1 tbsp water, or as needed.
Dampen hands and shape the mixture into balls. You can use a mini ice cream scoop to help with portioning.
Chill in the fridge, or store in the freezer for a longer shelf life.
